Double Up on Dinner

If you have any meat, potatoes, cabbage or vegetables left over from your St. Paddy’s Day dinner on Sunday, then you are in for a treat today. Even if you don’t have any leftovers, you’re still in for a treat, because these meal ideas sent in from my listeners can easily be made any time…

Skillet meal. Put peeled and quartered potatoes in a large skillet. Put in baby carrots or chunks of carrots. Cover with water. Slice cabbage into wedges and place on top of carrots and potatoes. Cut kielbasa sausage into small chunks. Place on top of other ingredients. Add seasonings to taste...we like it plain. Put on lid, boil for 20-30 minutes, or until potatoes/carrots are done to your preference...all other ingredients will be done by this time. Easy! Claudia

Chicken soup. Good thing about this, you can put almost anything in it. I put cabbage, celery, green beans, corn, potatoes, leftover chicken, and some egg noodles, then let it simmer. I take chicken gravy mix and put it in with onions, salt, and pepper to taste. Makes the whole house smell so good. Kathy

Vegetable Soup. Sauté your onions and bell peppers, add some garlic, add veggie broth, then add more veggies - carrots, potatoes, cabbage, leeks, green beans, etc. Serve with grilled cheese sandwiches! Jessica

Baked potatoes. 9 minutes per potato in the microwave, comes out perfect! Chop up some leftover meat, shred some cheese, and serve with a little BBQ sauce. Easy, filling supper. Carolyn
